Cod Caesar
4 fish fillets (about 6 ounces each)
1/4 cup mayonnaise
2 lbs freshly grated Parmesan cheese
I tbsp lemon juice
1/2 tsp anchovy paste (optional)
1/2 tsp salt
1/4 tsp freshly ground pepper
1/2 cup fresh breadcrumbs (one slice, no crust, cut in tiny
pieces)
2 tbsp fresh parsley
4 lemon wedges
Preheat oven to 450 F
Lightly coat a jelly roll pan with cooking spray.
Combine mayo, cheese, lemon juice, salt & pepper, anchovy paste
in small bowl.
Combine breadcrumbs and parsley on a sheet of waxed paper.
Spoon the mayo mixture on one side of the fish.
Press on the breadcrumbs to cover the mayo mixture.
Place in sprayed pan, crumb side up.
Bake for 15-20 minutes, or until fish is cooked and crumbs are
brown.
